Nutrition-maxxed Congee 🥣 🍄‍🟫 Congee is almost always made with plain white rice, so I wanted to see what would happen if I swapped in @lundbergfarms Wild Blend instead. Swapping it in was a bit of a risk as the blend has five varieties of rice, and I wasn’t sure if they’d break down properly for that classic congee texture. But, I’m happy to report it turned out very well! You get that same comforting essence, but with the bonus of more fiber and protein as well as a great textural contrast
