Chocolate Bubble Entremet 🫧 This was my first time using a gelatin mold to create an "indent" on the inside of a mold. I wasn't quite sure it would work, but I love the detail it brings to the top of the mold. I filled it with chocolate mousse, hazelnut praline & a hazelnut sponge.
